Offerings range from traditional American baked goods (made gluten-free and vegan) like cakes, cookies, pies, muffins, brownies and bars, to French macarons, decorated sugar cookies, and vegan herbed butters.
The most popular items have been the recently unveiled French macarons (flavors listed to the left, photo below), as well as the peanut butter caramel pie--a dense peanut butter caramel filling sandwiched with chocolate ganache and homemade graham cracker crust--and oatmeal creme pies--a GF/V take on a childhood staple.
I'm always open to experimentation, and if there's something you've been looking to try gluten-free and vegan, I'd be happy to discuss possibilities for a special order!

The Background:
After taking a break from baking for a few months while I pursued some upper management positions to get experience in the "books" aspect of running a business, my friends kept pestering me to bake for them.
Between my full-time job and doing special orders for friends and previous customers, I finally decided to take the plunge and quit my day-job. Staying at home with my kiddo while running the business from home (thanks to the Texas Baker's Bill) has been a great endeavor that I've enjoyed every bit of.
While Gravity Pastry is a mostly special order, custom-order business (I make occasional appearances at markets, which are advertised on the Gravity Pastry Facebook page), this is simply the next step for me on my way to opening a full cafe, bakery, and bar.
