ABOUT/ME:

Hi there, I’m Kaylee Walters, professional self-taught vegan, gluten-free, naturally-sweetened, whole grain pastry chef.  Located in Austin, Texas, I am currently the owner of Gravity Pastry.  Welcome to my website! 

 

My path to pastries was a quick one, and perhaps one not so surprising to many people who know me well. After snatching up a few degrees and some athletic achievements in college, I took a drastic turn into the food industry. Key businesses I've worked at include developing and leading the pastry team at Thai Fresh for three and a half years, creating French macarons at La Boîte (now the Picnic), interning at the Happy Pear in Ireland, studying under a traditional paysan-boulanger in the south of France, and conducting business as a regional manager for Daily Juice Cafe.

Whether it was my personality that sought experimentation, or my background in molecular biology and chemistry, one way or the other I ended up as an experimenting machine in the kitchen.  After a few years, I now cover a wide range of interests in baking–from rich and decadent sugar-laden desserts to raw, allergy-friendly, or naturally sweetened, or oil-free or gluten-free desserts–all have their foundation in my biggest passion: veganism. Although not necessarily suggesting any strict diet or lifestyle change for anyone, I do believe that reducing our intake of animal products to include a wider range and variety of foods, vegetables, and nutrients, can only bring us to a better understanding of what it means to lead a healthy and happy life that supports our planet’s well being.

 

After delving into this world of plants, I discovered that I actually prefered the whole, pure taste of a plant-based pastry, using high quality ingredients and fresh, local, and seasonal produce, to those that have highly refined sugars and processed and bleached flours.  By taking our food to its first source, I find comfort and pleasure in each bite, knowing that it's having a better impact on the planet, my health, and my mental well-being.
